Hajimaru Ginsan Nashiji Kiritsuke Petty 125mm - Ebony
Every knife roll needs a Petty. It’s the little sibling of the Gyuto, built for the delicate jobs a bigger blade makes clumsy, like trimming, peeling, scoring and slicing small fruit and veg. It’s also a handy size for smaller hands and smaller boards. Think of it as the knife you’ll use for all the jobs you didn’t realise needed a knife.
A closer look: A Petty with a Kiritsuke profile has a flat edge and an angled tip, which makes it great for precision work, push cuts and fine slicing. The Ginsan (silver-3) stainless steel sharpens easily and holds a keen edge, while the Nashiji finish gives the blade a textured “pear skin” look that also helps food release. The ebony handle is elegant and comfortable, and the stainless steel makes it easy to look after: hand wash, dry, done.
