Hatsukokoro Kurogane Blue 2 Santoku 165mm
The Santoku is Japan's answer to "do it all, do it well." The name literally means "three virtues" - slicing, dicing and mincing - which is a polite way of saying this knife doesn't do one thing brilliantly, it does everything brilliantly. Shorter and wider than a Gyuto, it's the knife that you'll keep reaching for.
A closer look: Blue 2 (Aogami 2) is a traditional Japanese carbon steel prized for taking a very fine edge and keeping it. The iron cladding protects the core and makes the knife tougher and easier to sharpen. Carbon steel will patina over time, a darkening that gives each knife its own character, and it’s best wiped dry after use rather than left damp. At 61 HRC it’s a good balance of sharpness and durability, and the wide blade is handy for scooping up what you’ve chopped. The octagonal bubinga handle is comfortable for long prep sessions.
