Part Santoku, part Gyuto, the Bunka borrows the best of both - a reverse tanto tip for precision work, and a flat edge for everyday chopping. "Bunka" roughly translates to "culture," which feels about right for a knife that refuses to pick a lane and just does a bit of everything with style.

A closer look: The core is Ginsan (silver-3) stainless, which sharpens easily and holds an edge well. It’s wrapped in a Kurouchi Tsuchime clad: the dark, rustic “blacksmith finish” paired with a hammered texture. It’s a striking blade that also helps release food as you cut. The reverse tanto tip is great for fine tasks like scoring, trimming and getting into tight spots. Because the cladding is reactive and the finish needs looking after, this one is rated Hard for maintenance: hand wash, dry straight away, and an occasional sharpen on a whetstone will keep it at its best. The double Pakkawood handle is durable and water resistant.
