Hatsukokoro Hikari SLD Petty 130mm - Ebony
Every knife roll needs a Petty. It’s the little sibling of the Gyuto, built for the delicate jobs a bigger blade makes clumsy, like trimming, peeling, scoring and slicing small fruit and veg. It’s also a handy size for smaller hands and smaller boards. Think of it as the knife you’ll use for all the jobs you didn’t realise needed a knife.
A closer look: The Hikari is made from SLD, a tough, high-carbon tool steel known for a fine edge and impressive edge retention, so it keeps its bite through a lot of prep. At 130mm it’s slightly longer than most Pettys, which gives you extra reach for slicing and a bit more versatility on the board. The ebony handle is dark, smooth and dense, and it gives the knife a premium look and feel. Hand wash and dry after use and it’ll stay sharp and looking good.
